Cheddar Potato Cauliflower Soup


Recently, my youngest started the process to get an expander. The first step is spacers. She said they hurt her to eat. She stopped eating, even her favorites. So I started making soup from scratch for her. The first we went with was:
Cheddar Potato Cauliflower Soup

First boil cauliflower in one pot until soft (remember this is so she can eat without pain)
Boil potatoes at the same time in another pot, until soft. (I used yellow and red potatoes about 6 to 8)
After the potatoes have cooled (just dump the hot water, add cold water and ice), peel the skins off.
Place potatoes and cauliflower in a large crock pot with 1 stick of unsalted butter.
Open one can of Campbell Cheddar Soup or Cheddar Broccoli Soup.
Add about 1 cup milk and 1/2 cup half and half.
Mash the potatoes and cauliflower until small pieces.
Add shredded cheddar cheese
Add if you so desire about 1/2 cup of jar cheese (like Kraft, the kind you can melt for use with chips)
Add black pepper to taste.
Mix well and let cook for about 2 hours.
It is a nice soft soup and very filling.
