More From FB page, Things Happening, Things to Save and FO's

I noticed that I save a lot to my FB page, so I really need to clean it off again so I can find a recipe to make with my kids (and also so I can access the list of ingredients in the store). If I save a recipe here and I don't credit, it is because I don't know who to credit. I try to link, rather than post the recipe, but when I cannot find the link, I will post. If you know who the recipe belongs to, please share in comments and I will give proper credit.


I would also like to announce that if you are on Ravelry, there is a new group. It is called Dawn's Light at UBC. It is local group for Lebanon, OH and they meet the 2nd Saturday of every month. Come and check the group out at: Ravelry: Dawn's Light at UBC


The Lebanon Symphony Orchestra is having a Cookie Concert in February, here is some of the information. Come out and check it out.



I did make Cinnamon Roll Waffles with the girls on Saturday. They loved them. It was very simple. Take your waffle iron and cinnamon rolls and place a roll in the iron and cook (very quickly) and add the icing.

 I have made the Crock Pot Potato Soup for the family. I did make some changes, because of allergies, but the girls loved it!


There was a statement that I saw posted to FB, that said that, crafters only make 7 things a year. Wow that number is low! Just for the month of January, my number is higher than that. Wonder how many you make for the year?

I have also been trying to make things for gifts. I have made many Crochet Flower Hot Pads. They are so quick and simple and you can make them very colorful.
Blogger is not letting post pics right now. I will try again after this posts and maybe just do one of pics. You can come back to this post for the links to find the patterns.

I have also finished many Winter Slouch Hats. Many colors and yarns. Love making this hat. It is so very simple and only takes a few hours.


I have also made many scarves. They are called stash busting scarves. You pick out three different colors and styles of yarns and you knit until one is gone and then you can add in another or finish if it is long enough.





I have also made a Swiffer Cover. I made one for me and decided that it would be good for gifts also. It works great and my girls love it.

Celtic Animal Zodiac As Shared on Wicca's Teachings

I have a little Irish in me and so enjoy looking all things Irish or Celtic. I wanted to save this for later fun with the girls.

The Celtic Animal Zodiac.

The Celts honored the rhythms of Nature, and observed different flavors of their environment according to the season. Like our Native American kin, the full Moon in each month held a special personality. They had... a Tree Zodiac, a Moon Zodiac and an Animal Zodiac. The Animal Zodiac is based on the animal that is most prominent within the season and the month of the persons birth. Below is a brief description of personality traits from the signs.

Stag/Deer
December 24 - January 20
The stag Celtic animal sign has high ideals and aspirations. If you want to start a new project, get a Stag sign to help you. They will not be deterred from their vision. They are thorough, patient and their persistence insures their triumphs. When others have long given up, Stags buck their way past boundaries. They are proud, and rightfully so - they hold themselves in a regal way. They are naturally noble, like they came from royalty. This is not to say Stags feel entitled. Far from it. Cat
January 21 - February 17
Quick minded, and even quicker wit, the cat of the Celtic year packs a pounce in the realm of intellect. This Celtic animal sign has impeccable reasoning abilities, but moreover they have a knack for seeing the underside of things, a "sixth mental sense" if you will. They have unorthodox vision, and should be called upon when fresh new perspectives are needed in a project. They also have a kind, humanitarian quality that makes them lovable. Although sometimes they can appear aloof because they like to be on the fringe, always observing. Nevertheless, they have the best intentions at heart. Cats are also very creative, and need an artistic outlet to express themselves.

Adder/Snake
February 18 - March 17
The Celtic animal sign of the snake has a cool exterior but are infinitely lively. They are curious and are always full of questions about how the world works, and how the people around them work (even if they aren't openly asking, you can bet they're figuring out the answers in their own mind). Snakes are natural communicators, and they can be hugely persuasive. If they are passionate about a cause they can round up the whole neighborhood with their zeal and enthusiasm for their purpose. Snakes can be spontaneous and unpredictable too. And although they're pretty flexible, they like things to go their way (who doesn't?), and will prove to be uncooperative if pushed in a corner.

Fox
March 18 - April 14
The fox sign is amazingly cunning and knows how to work a room with sly, sexy humor. Full of guile, vigor and bright intelligence the fox is an untamable force. This Celtic animal sign is the one to take with you on exotic vacations, they will wind your ways into amazing adventures. They have a knack for story telling, and every experience is fodder for their tales. They are tender-hearted, although they don't show that soft side too often because they're too busy playing and cracking jokes. However, they aren't shy about showing their loyalty; if you are the friend of the fox, you have a friend for life. Highly energetic and courageous, the fox has an indomitable spirit.

Cow/Bull
April 15 - May 12
Strong, loving, stable and sure are the watchwords for the bulls of the Celtic lunar year. Cows/bulls are the ones you turn to when you need a shoulder to cry on, honest opinions and solid advice (particularly in relationships). These Celtic animal signs have bulls-eye intuition and can spot a liar from a mile away. Because they're highly intuitive, they can be misunderstood as moody or over emotional. They also come by stubbornness honestly. They have excellent taste, and have a flair for classy elegance in fashion and home décor. These signs are as trustworthy as the day is long, and know how to keep a secret.

Seahorse
May 13 - June 9
The Celtic animal sign of seahorse is vastly flexible and resourceful. The seahorse is the person you want managing your finances or handling your legal matters because these people are infinitely clever (if there's a loophole, they've either found it or invented it). They also have amazing memory retention. They are sometimes hard to follow because they're minds are so sharp. They can also be changeable, but they always come back around to a level of high charisma. These people are astoundingly versatile and adapt remarkably well in any environment. Seahorses are so lovable too. Even better, they love being adored, and easily reciprocate affection.

Wren
June 10 - July 7
The wren Celtic animal sign is associated with freshness, and opening to new insights, and sunnier dispositions. They are natural care givers and will sign sweet melodies to cheer their friends and family. They remain calm in the midst of stormy weather. You want to have these people with you if you find yourself in a crisis; they are resourceful and stay cool under pressure. Wrens are self-motivated (they know how to get what they want) and work best in solo situations. They are also have a high sense of responsibility and moral integrity. They seek balance in their lives by being leaders at work on in the community, but secretly they would rather be traveling abroad living a life of a gypsy (this however, is often against their better judgment).

Horse
July 8 - August 4
Exuberant, expansive and powerful, the Celtic animal sign of the horse will give you a run for your money. Naturally competitive, and rightfully so. The horse has loads of talent, and enough confidence to go ‘round, particularly in business matters. They have a sixth sense when it comes to strategy and navigation (these signs have an uncanny internal compass). They are gregarious, and openly charming (even flirty). They make grand appearances, and know how to carry themselves with style and authority. They do well in leadership positions, but they are just as happy to be the helpers of the clan (as long as they are given adequate recognition for their talents and contributions). Potentially headstrong, they are also valiant in times of adversity.

Fish/Salmon
August 5 - September 1
Salmon signs dive deep in their inner waters for inspiration, bright visions and dreamy perspective. They are naturally intuitive but they don't make a big deal out of it. These people have a unique view of the world which makes them some of the community's best artists, poets and visionaries. Some times they dive way too deep for the rest of us, and some just can't follow where they swim. But that's okay, the fish sign needs that kind of depth, isolation and introspection because when they come back up for air, the world is awed by their brilliance and insight. They are very bright and intelligent and know how to get what they want no matter how hard they must work for it.

Swan
September 2 - September 29
Spiritually evolved, and eloquent in expressing themselves, the swan swims in a class of their own. They have high standards, infinitely discriminating tastes and they have a keen eye for beauty (even when others cannot see it). Very refined and noble, sometimes the swan is mistaken as detached. This however, is not the case. The swan is a lover, and can prove to be quite passionate in relationships. That "coolness" comes from the swan's understanding of composure. They're natural aristocrats. They can be exacting in details, and have specific ideas about how things should be done. If you want someone who is perceptive, organized and extremely tasteful, get a swan's perspective.

Butterfly
September 30 - October 27
This Celtic animal sign lives up to the adage "social butterfly." Flitting from friend to friend in parties, and always in contact with loved ones (they're the ones always on the phone, or texting). They can't help it. Butterflies are gentle souls who can't be tied down for very long. They love to dream, express new ideas and talk about their plans with all their friends. These are the people who brighten up any dark day with their cheer and magnetically bright personalities. They are naturally empathetic, and would never intentionally harm anyone. Rather, they make easy friends, and like to see others uplifted. Butterflies bring a sense of wonder and youth to our world. Keep these people around you to remind you of how truly good life can be.

Wolf/Hound
October 28 - November 24
Wolves have a strong sense of purpose, and will go to great lengths to see their point is made, and fully understood. This Celtic animal sign is fearless, brave and they rarely compromise. These are the hero's you want by your side in the heat of battle. They will not back down, and they will take no quarter. Others marvel at their inner fortitude. Where do they find the energy and wherewithal to keep going? They thrive on challenge, that's what gives them their stamina. They have impeccable character, and "honor" is their middle name. They are strong willed, and sometimes live up to the "lone wolf" label. Nevertheless, you always know where you stand with them, and they will unite with you as long as you share their cause.

Falcon/Hawk
November 25 - December 23
Seldom do we see more focus in the Celtic animal signs than that of the hawk. When these signs see something they want, they go after it with a force that is remarkable. If, however, they aren't interested in a project, they will fly off to other more interesting prospects. They care deeply for wisdom, and often focus on sharing that knowledge with others. They can be very philanthropic and generous. Hawks have a keen sense of balance, and they navigate through life with an internal "true north" that creates an uncanny integrity within them. They are open minded and philosophical. Although they entertain all manner of hypotheses, they are strongly opinionated (that inner "true north" thing). That is not to say they cannot be persuaded.


Oh and for the record, according to this, I am a Wolf/Hound.

January Almost Over

January is almost over and I am trying to do different things. First, I am trying to knit and crochet more this year (as last year I lost time due to homeschooling). Second, I am trying to read more daily devotionals. I started the Duck Commander Devotional. It is a really enjoyable read. I started reading another devotional from Beth Moore. Third, I want to try and read more in general. Homeschooling really did throw the whole house for a loop, but I think we will get into a routine and all will go well.


So far for the month of January, I am going to try and read the alphabet again. That was pretty good way to pick some books. I wanted to try reading more books in another type of genre, but not sure what yet. So far here is what I have finished reading:

Also, I want to try and exercise more. This should prove interesting as the year hasn't gone well. The kids are not very cooperative on their school work, but getting back to it. Esther is finally writing some really good papers. Just wish she didn't need to take 3 weeks to get to it.


Also, My FB page is getting full with things I want to save again. So where possible I will post links to the pages, but when I don't have a link or a person, please keep in mind, I saved here so I could find it again. I did make the potato soup recipe for Crock Pots, that I saved on my blog. My family loved it, but I did have to change it a little because of allergies, but they loved it! They asked for it again! So if you know who is responsible for a recipe I have shared, please let me know. I will change to a link (if I am given one) or give proper credit.

Texas Road House Honey Butter

1 cup (2 sticks) butter, very softened
1 cup powdered sugar
1 cup honey
2 tsp. cinnamon...

Add everything in the order listed, whipping well.



Fried Pickles

Ingredients

Dill Pickle Chips
3/4 to 1 cup of beer...
2 eggs
1 -2 cups of flour
Cholesterol free oil

Pour oil in a large skillet until the oil is about 1-2 inches up the side of the pan. Heat oil to 350 degrees.

Strain pickles in a small colander.

In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter.

Dip pickles one at a time using tongs into the batter and then place in the heated oil.

Fry pickles for about 2 minutes flipping the pickle after about 1 minute.

Place pickles on a plate lined with paper towel and then season with salt. Serve with Ranch Dressing.


State Fair Funnel Cakes
Ingredients:

3 large EGGS
1/4 cup Sugar...
2 cups milk
3 2/3 cups Flour
1/2 teaspoon Salt
2 teaspoon Baking Powder
Vegetable oil

Directions:

Beat eggs and sugar together and then add the milk slowly--beat. Add the dry ingredients and beat until smooth and creamy.

Pour batter into a funnel and at the same time, use your finger to plug the hole. In a large cast iron pot, add 2 inches of oil to the bottom.

When the oil becomes hot, move your hand over the pot and slowly release your finger so the batter can start cooking.

Move the funnel around to make designs.

Brown on both sides--then immediately remove and drain extremely well.

Top with cinnamon sugar, or powdered sugar as a topping.


Chocolate Chip Gooey Butter Cake

Crust
1 box butter-recipe cake mix
1 egg
1/2 cup (1 stick) butter, melted...

Filling

1 8 oz. package cream cheese, softened
2 eggs
1 tsp. pure vanilla extract
1 16 oz. box powdered sugar
1/2 cup (1 stick) butter, melted
1 cup chocolate chips

Preheat oven to 350 degrees. Light grease a 9 x 13 in. baking pan. In a bowl, combine cake mix, egg, and butter with an electric mixer. Mix well. Pat into the bottom of prepared pan and set aside. Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump powdered sugar and beat very well. Reduce the speed of mixer and slowly pour in melted butter.

Mix well. Stir in the chocolate chips. Pour filling onto cake mixture and spread evenly. Bake for 40-50 minutes (it took me closer to 50 minutes). You want to center to be a little gooey, so don't bake it past that point! Remove from oven and allow to cool completely. If you want to drizzle melted chocolate over the top allow it to cool for at least 15 minutes and then drizzle over. Allow to cool for at least another hour and then cut into bars.

Peanut Butter Oat Balls
Serves 24

A no bake snack that is low in points and great for after school, quick breakfast or after workout pick me up.

Prep Time - 5 min

Total Time - 1 hr

Ingredients
1 1/2 cups quick cooking oats
1/2 cup reduced fat peanut butter
1/3 cup maple syrup
3/4 cup puffed rice cereal
1/2 cup mini chocolate chips
1/4 cup peanut butter chips

Optional Add-in's
Pecans, walnuts or almonds
Toasted Coconut
Dried Cranberries, cherries or apricot

Instructions
1.In a medium bowl combine all the ingredients
2.Refrigerate for 30 minutes to 1 hour to help make it easier to roll
3.Using your hands roll mixture into 1" balls, you may have to press ingredients into each other to make it all stick together - if the mixture is too dry add in some additional maple syrup, peanut butter or honey
4.Refrigerate for another 30 minutes or so t set the balls
5.Store in an airtight container for up to 1 week

POTATO PUFFS
Ingredients
3 cups of mashed potatoes
2 eggs
1/3 cup sour cream (optional extra for serving)
1 heaping cup shredded sharp cheddar cheese ...
2 tablespoons grated Parmesan
2 tablespoons chopped chives or parsley
Salt and black pepper, to taste
Directions Preheat oven to 400 degrees F. Lightly grease with butter 8 - 9 of the wells of a nonstick muffin pan. In a medium mixing bowl whisk the eggs then mix in the sour cream. Stir in both cheeses and the chives. Add potatoes and mix well. Spoon them into the pan filling the cups to slightly below the top. Bake 25- 35 minutes until they pull away from the sides of the cup and are golden brown. Remove from oven and let them cool 5 minutes in pan. Serve with sour cream if desired.

1-2-3 Cake. I love this idea!!!
You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix. Mix them together (shake them in a big bowl). Then simply st...ore the mixture in an airtight container until you get the urge for dessert. Then just put three Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water. Microwave it for one minute and you will have a single serving of cake! Top with fruit, ice cream, whipped cream or whatever! Awesome for those of us who want something sweet every now and then without making an entire cake!!!

Amish Cinnamon Bread

No kneading, you just mix it up and bake it

Batter:
1 cup butter, softened...
2 cups sugar
2 eggs
2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice
4 cups flour
2 teaspoons baking soda

Cinnamon/sugar mixture:
2/3 cups sugar
2 teaspoons cinnamon

Directions
Cream together butter, 2 cups of sugar, and eggs. Add milk, flour, and baking soda. Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan). Mix in separate bowl the 2/3 c sugar and cinnamon. Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan. Add remaining batter to pans; sprinkle with last of cinnamon topping. Swirl with a knife. Bake at 350 degrees for 45-50 min. or until toothpick tester come clean.
Cool in pan for 20 minutes before removing from pan.

 Roasted Cauliflower with Parmesan and Bread Crumbs
1 head cauliflower, cut into 1/2 -1 inch florets
1/2 cup fresh bread crumbs, (I USED GLUTEN FREE BY ALEIA'S)
1/4 cup freshly... grated Parmesan (I CONFESS, I DON'T MEASURE AND I'M SURE I USE MORE!!!!)
1/4 cup olive oil (AGAIN, I DON'T MEASURE BUT MAKE SURE THE FLORETS ARE WELL COATED!!!!!!
Salt and pepper to taste
Preheat oven to 400º.
Toss florets with olive oil, bread crumbs and cheese. Spread in a single layer on jelly roll sheet lined with nonstick foil. Season with salt and pepper. (since I use a lot of cheese I often don't need the salt) Roast 30-40 minutes, until nicely browned!!!!

CINNAMON ROLL CAKE!! This is sooo easy and tastes Yummie!!

Cake:
3 c. flour
1/4 tsp. salt
1 c. sugar...
4 tsp. baking powder
1 1/2 c. milk
2 eggs
2 tsp. vanilla
1/2 c. butter, melted

Topping:
1 c. butter, softened
1 c. brown sugar
2 Tbsp. flour
1 Tbsp. cinnamon

Directions:
Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9x13 pan. For the topping, mix all the ingredients together until well combined. Drop evenly over the batter and swirl with a knife. Bake at 350 for 28-32 minutes.

Glaze:
2 c. powdered sugar
enough milk to make a runny glaze about 6 or 7 tablespoons
1 tsp. vanilla

While warm drizzle the glaze over the cake.

Celtic Tree Zodiac

This is on my FB and I enjoyed reading it. It is very interesting and I wanted to be able to save it and find it. I think it is from Wicca Teachings.



The Celtic Tree Zodiac is based on the ancient idea that the time of our births is pivotal to the formation of our personality and behavior. The spiritually savvy Celts, particularly the druids were expert observers. Over time, they recognized that a child born within a certain season would develop certain qualities. Further, the druids observed patterns in the color and shape of a persons life ac...cording to the motions of the moon (their calendar being based on a lunar year being 13 months) and the season in which we are born. Below is listed the Tree characteristics of each Tree.

Birch - The Achiever
December 24 - January 20
If you were born under the energy of the Birch you can be highly driven, and often motivate others they become easily caught in your zeal, drive and ambition. You are always reaching for more, seeking better horizons and obtaining higher aspirations. Chocolate Cain Cake
1 1/2 c. water
2 c. sugar...
3/4 c. butter
2 eggs, slightly beaten
1 1/2 tsp. vanilla
2 c. flour
1/2 c. cocoa
2 tsp. baking soda
1/2 tsp. salt
Melt butter and add boiling water. Add sugar, and stir until dissolved. Add eggs & vanilla, beat well. Mix dry ingredients. Add to butter mixture, mixing well. Batter will be thin. Pour into greased 9" x 13" pan
Bake at 350*F for 30-35 minutes. Let cool before frosting it. Frost with Frosting (recipe follows) and pipie it onto the top of your cake with a star piping tip. Keep the frosting cool and work quickly. If it gets too warm, refrigerate it for a few minutes. Sprinkle with chocolate sprinkles.

Secret Frosting
1/2 cup vegetable shortening
1/2 cup butter or 1/2 cup margarine, softened
3/4 cup cocoa
1 1/4 teaspoon vanilla extract
4 cups sifted confectioners' sugar (1 lb.)
3 -4 tablespoons milk
Directions:
In a bowl, cream shortening and butter with electric mixer. Add cocoa and vanilla. Slowly add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, the icing will look dry. Add milk, 1 tbsp at a time until you get the consistency you want, and beat at medium speed until light and fluffy. Cover the bowl with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator until ready to use.


French Toast in a crock pot
1 loaf of bread sliced or diced (I have used dinner rolls that Kroger had marked down.)
6 eggs
2 cups milk
½ tsp cinnamon
½ tsp nutmeg

Topping
¼ cup butter Softened...
½ cup firmly packed brown sugar
1 tsp cinnamon
½ cup chopped pecans
½ tsp nutmeg

Instructions:
Whisk together eggs, milk and cinnamon, nutmeg and pour over diced bread in a large bowl. Cover an let it soak overnight in the fridge or atleast 4 hours.
When ready to bake spray the inside of the crockpot (4-6 quart sized works best) to avoid sticking.
Pour in Bread Mix.
In a small bowl mix together butter, brown sugar cinnamon, pecans and nutmeg.
Crumble over top of the bread mix. Cover and Cook on low for 4 hours.
Let sit for 15-20 minutes and serve!



Pumpkin Cheesecake Pie

You Will Need:

2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar...
1/2 teaspoon vanilla extract
2 eggs
1 (9 inch) prepared pie crust (or Graham cracker crust, whichever you prefer)
1/2 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1/2 cup frozen whipped topping, thawed
Directions:

Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.
Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.



Muffins
(that taste like doughnuts)
1 1/3 c flour
1 1/2 tsp b powder
1/2 tsp salt...
1/2 tsp nutmeg
1/4 tsp cinnamon
1/3 c oil
3/4 c wht sugar
1 egg
3/4 c milk
Combine dry ingred, mix liquids, beat till well mixed. Add to dry ingred and mix till just blended. Put into muffin tin and bake at 350/F for 20-25 m min.
While muffins are hot dip into butter and roll in powdered sugar or sugar & cinnamon.
1/4 c wht sugar
1/4 tsp cinnamon
melted butter or marg.



FRUIT PIZZA

1/2 cup butter
3/4 cup sugar...
1 egg
1/2 tsp. baking soda
1 tsp cream of tartar
1 3/4 cup flour
1- 8 oz. pkg cream cheese
1/4 cup honey or agave nectar
2 Tbsp Orange/Pineapple juice
1 cup Cool Whip
Fresh fruit for topping

Preheat your oven to 350°. In a bowl, beat butter, sugar, and egg until fluffy. Add baking soda, cream of tartar, and flour. Mix until well combined. It should be the consistency of a soft cookie dough. Press dough onto Pampered Chef Large Round Stone. Bake for 15 minutes. Allow to cool.

In a separate mixing bowl, combine cream cheese, juice, honey, and cool whip. Mix until well combined and spread on cooled cookie crust.

Top with fresh fruit. Keep refrigerated until ready to serve
