We have a lot happening at the same time. We celebrated the birthdays of my cousin (Uncle's daughter), my aunt (they came down for the funeral), my sister (the one closest in age to me) and my anniversary and another cousin's birthday (grandson of Uncle). My girls also started spring break the same weekend. So glad we are homeschooling. The weather has been a cross between cold and wet and cold and sunny and then one hot and sunny. They could work on school work on the rainy, stormy days and then when the weather is nice we can take the day off and play outside or go somewhere.
Just with so much happening, I have fallen behind on moving things from my FB page to here, so it is time to catch up. Sorry if this becomes really long, but I saved a lot.

Easy Healthy 'Hash Browns'
(I tried googling to find this recipe to give proper credit but could not find it. If someone knows the correct link, please let me know).
Instead of grated Potatoes Try grated Zucchini…
2 Cups Zucchini, grated
1 Onion, chopped fine
4 Egg Whites
1/2 cup Whole Wheat Bread crumbs
1 tbsp Italian Seasoning or seasoning like basil, oregano, rosemary, thyme
2 tsp Garlic Powder
Sea Salt & Pepper to taste
Olive Oil
1. Preheat oven to 400F.
2. Grease a muffin tin with Oil
3. Grate the Zucchini
4. put in a towel to squeeze out the excess water. **This will keep your Bites from being Soggy. You want them crisp like hash browns… grated potatoes.
5. In a bowl combine Zucchini, Onion, Egg whites, Bread Crumbs, Seasonings
6. Using a spoon, fill muffin cups to the top and bake for 18-25 minutes or until the top is browned.
